The foundation of paleo is based on omega 6 to omega 3 ratios. Ideal ratio is 1:1. When the omega 6 ratio is high (for example grain fed chicken is ~12:1 and grains are higher than 20:1) this causes inflammation in the body. It would be no surprise that eating paleo allows your body to heal much faster and become stronger because you lower inflammation in your body. Grains cause a lot of damage to the body, specifically the gut. The book Grain Damage talks about this.

As far as high fat and low carb, or high carb and low fat, both can be paleo. Most fruits and vegetables have high omega 3 ratio, squash for example has higher omega 3 than omega 6 which is very good. Some people do better with high fat, low carb, some people do better with high carb, low fat, or balance of the two, you can play around to see which one works better for you. The only key requirement is maintaing a good omega 6 to omega 3 ratio.
